I also cooked some banana bread, I love it! If you have some super riped black bananas laying around, don’t throw them out! Just make this recipe:
Banana Bread
1 1/4 cup all purpose flour ( I do 1/2 cup whole wheat flour and 3/4 cup all purpose flour)
1 tsp baking soda
1/2 tsp baking powder
Mix these ingredients in a bowl an set aside for now
1 egg
1 egg white
3/4 cup sugar
1/4 cup low-fat plain yogurt
1/4 cup vegetable oil (I use olive oil, whatever)
1 tsp vanilla
3 medium mashed ripe bananas
Mix all of those ingredients (except the bananas) in another bowl and then add the bananas. Then add the dry ingredients and mix until just combined. Pour batter into a banana bread pan (sometimes I use the regular one to make 1 loaf and sometimes I use 2 mini ones to make 2 smaller loaf).
Bake in oven at 350F for an hour or until a toothpick inserted in the middle comes out clean.
Voila!
Makes 12 slices with 163 calories each so don’t go eat the whole thing (yeah… it is so good I have done that before!)
Celt left for work early in the morning but I did have lunch with him before he left town for business. I made him a sandwich to bring with him too. I used to make him more elaborate lunches but the demands of motherhood now leaves me with little time to do so.

Today is Earth Day! Have you done anything to save the planet lately? Well I have! Maybe that will give you some ideas… A few months ago we replaced all of our regular bulbs with the Energy Saving Light Bulbs. So that’s a start.
Our neighborhood don’t do curb side recycling which is a real shame. I also find it extremely hard to find places to recycle our stuff. I have not found anywhere for cans or cardboard yet. But last month a found a paper recycling bin at our library so I put a box in our kitchen and we put all of our paper in it and once a week I go to the library to empty that box in the recycling bin. Also our grocery store takes all sorts of plastic bags back (dry cleaner bags, plastic packaging and any other plastic bags) so I save them all and drop them off there when I do the grocery. It is mandatory in California for some stores to have those recycling bins. Hopefully it will be nation wide soon (maybe it already is but I couldn’t find the information…).
