No Trip for Me

Well it looks like I am not going to Atlanta after all. Mandy Blake preferred to schedule something in May in Kentucky. Celeste would have been able to see me but she lives 1:15 hour away from where Celt is staying. On top of that my daughter came down with a fever and a bad ear infection and the doctor doesn’t advise flying anywhere with that condition. So we are staying home! Oh well, things don’t always work out I guess.
I missed my mommy work out this morning because I had to go to the doctor but I made it up by doing some Tae Boe at home instead… YEAH RIGHT! Haha I wish!
I also cooked some banana bread, I love it! If you have some super riped black bananas laying around, don’t throw them out! Just make this recipe:
Banana Bread
1 1/4 cup all purpose flour ( I do 1/2 cup whole wheat flour and 3/4 cup all purpose flour)
1 tsp baking soda
1/2 tsp baking powder
Mix these ingredients in a bowl an set aside for now
1 egg
1 egg white
3/4 cup sugar
1/4 cup low-fat plain yogurt
1/4 cup vegetable oil (I use olive oil, whatever)
1 tsp vanilla
3 medium mashed ripe bananas
Mix all of those ingredients (except the bananas) in another bowl and then add the bananas. Then add the dry ingredients and mix until just combined. Pour batter into a banana bread pan (sometimes I use the regular one to make 1 loaf and sometimes I use 2 mini ones to make 2 smaller loaf).
Bake in oven at 350F for an hour or until a toothpick inserted in the middle comes out clean.
Voila!
Makes 12 slices with 163 calories each so don’t go eat the whole thing (yeah… it is so good I have done that before!)
